Biscuit base

Ingredients

  • 250 g dry biscuits
  • 125 g soft butter

Method

  1. Blitz the biscuits and butter in a food processor.
  2. Spread and press the mix in the desired mould.

Cheesecake mix

Ingredients

  • 750 g Philadelphia cheese
  • 175 g fresh cream
  • 80 g caster sugar
  • 10 g gold gelatine
  • 1 vanilla pod, seeds

Method

  • Soak the gelatine in water for a few minutes, then squeeze the water out.
  • Warm half of the cream and mix the gelatine inside, until completely melted. Add the rest of the cream.
  • Soften the Philadelphia with sugar and vanilla, then add the cream.

Finishing

Pour the mixture onto the biscuit base and leave to rest for 2 hours in the fridge.

Garnish as desired with fruit, chocolate, etc…
