Blood Orange Olive Oil Cake

Cake Mix

Ingredients

  • 3 eggs
  • 415 g caster sugar
  • 285 g olive oil
  • 56 g blood orange olive oil
  • 285 g whole milk
  • 56 g blood orange juice
  • 310 g plain flour
  • 4 g baking powder
  • 5 g baking soda
  • 3 g kosher salt
  • 113 g almond flour

Method

  1. In a large bowl, whisk together eggs, sugar, olive oils, milk, and orange juice.
  2. In a separate bowl, sift together the flour, baking soda, baking powder, salt, and almond flour.
  3. Add the sifted dry ingredients to the wet mixture and whisk until incorporated.
  4. Bake on a half sheet tray lined with parchment paper and sprayed with oil.
  5. Bake at 350°F/180°C for 25-30 minutes and allow to cool at room temperature before cutting.
Honeycomb Tuile

Ingredients

  • 30 g unsalted butter (room temperature)
  • 40 g icing sugar
  • 30 g egg whites
  • 35 g plain flour
  • 5 g honey

Method

  1. In a mixing bowl, whisk together butter and sugar until creamy.
  2. Add the egg whites to the mixture.
  3. Sift the flour into the bowl and mix.
  4. Finally, add the honey and then chill for 1 hour.
  5. Place into the Honeycomb silicone mould and bake at 350°F/180°C for 4 minutes.
  6. Allow to cool on the counter, then remove from the mould carefully.
