Blood Orange Olive Oil Cake

Cake Mix
Ingredients
- 3 eggs
- 415 g caster sugar
- 285 g olive oil
- 56 g blood orange olive oil
- 285 g whole milk
- 56 g blood orange juice
- 310 g plain flour
- 4 g baking powder
- 5 g baking soda
- 3 g kosher salt
- 113 g almond flour
Method
- In a large bowl, whisk together eggs, sugar, olive oils, milk, and orange juice.
- In a separate bowl, sift together the flour, baking soda, baking powder, salt, and almond flour.
- Add the sifted dry ingredients to the wet mixture and whisk until incorporated.
- Bake on a half sheet tray lined with parchment paper and sprayed with oil.
- Bake at 350°F/180°C for 25-30 minutes and allow to cool at room temperature before cutting.
Honeycomb Tuile
Ingredients
- 30 g unsalted butter (room temperature)
- 40 g icing sugar
- 30 g egg whites
- 35 g plain flour
- 5 g honey
Method
- In a mixing bowl, whisk together butter and sugar until creamy.
- Add the egg whites to the mixture.
- Sift the flour into the bowl and mix.
- Finally, add the honey and then chill for 1 hour.
- Place into the Honeycomb silicone mould and bake at 350°F/180°C for 4 minutes.
- Allow to cool on the counter, then remove from the mould carefully.
