Classic Cheesecake

Biscuit Base
Ingredients
- 250 g dry biscuits
- 125 g soft butter
Method
- Blitz the biscuits and butter together in a food processor until well combined.
- Spread and press the mixture into the desired mould to form an even base. Set aside.
Cheesecake Mix
Ingredients
- 750 g Philadelphia cheese
- 175 g fresh cream
- 80 g caster sugar
- 10 g gold gelatine
- 1 vanilla pod (seeds only)
Method
- Soak the gelatine in water for a few minutes, then squeeze out the excess water.
- Warm half of the cream and dissolve the gelatine into it, stirring until completely melted. Add the remaining cream and mix well.
- In a separate bowl, soften the Philadelphia cheese with the sugar and vanilla seeds. Gradually fold in the cream mixture until smooth.
Finishing
Method
- Pour the cheesecake mixture onto the prepared biscuit base, smoothing the top with a spatula.
- Refrigerate for 2 hours to set.
- Garnish as desired with fruit, chocolate, or other toppings before serving.
