Classic Cheesecake

Biscuit Base

Ingredients

  • 250 g dry biscuits
  • 125 g soft butter

Method

  1. Blitz the biscuits and butter together in a food processor until well combined.
  2. Spread and press the mixture into the desired mould to form an even base. Set aside.
Cheesecake Mix

Ingredients

  • 750 g Philadelphia cheese
  • 175 g fresh cream
  • 80 g caster sugar
  • 10 g gold gelatine
  • 1 vanilla pod (seeds only)

Method

  1. Soak the gelatine in water for a few minutes, then squeeze out the excess water.
  2. Warm half of the cream and dissolve the gelatine into it, stirring until completely melted. Add the remaining cream and mix well.
  3. In a separate bowl, soften the Philadelphia cheese with the sugar and vanilla seeds. Gradually fold in the cream mixture until smooth.
Finishing

Method

  1. Pour the cheesecake mixture onto the prepared biscuit base, smoothing the top with a spatula.
  2. Refrigerate for 2 hours to set.
  3. Garnish as desired with fruit, chocolate, or other toppings before serving.
