Green Apple Gazpacho

Ingredients

  • 200 ml green apple juice
  • 150 ml cucumber juice
  • 150 ml green bell pepper juice
  • 170 ml celery juice
  • 60 ml fennel juice
  • 1/2 bunch of coriander
  • 20 g lemon juice
  • 15 g apple vinegar
  • 3 g Tabasco
  • 10 ml extra virgin olive oil
  • Salt and pepper, to taste
  • 200 g toasted white bread (diced)

Method

  1. Process the green apple, green bell pepper, fennel, celery, cucumber, and coriander in a juicer or blender one by one. Measure the juices according to the recipe.
  2. Combine all the measured liquids in a bowl.
  3. Add lemon juice, apple vinegar, and Tabasco. Season with extra virgin olive oil, salt, and pepper to taste.
  4. Mix in the diced toasted white bread and let the mixture rest in the fridge overnight.
  5. Strain the gazpacho through a fine sieve and keep it chilled in the fridge until ready to serve.
