Green Apple Gazpacho
Ingredients
- 200 ml green apple juice
- 150 ml cucumber juice
- 150 ml green bell pepper juice
- 170 ml celery juice
- 60 ml fennel juice
- 1/2 bunch of coriander
- 20 g lemon juice
- 15 g apple vinegar
- 3 g Tabasco
- 10 ml extra virgin olive oil
- Salt and pepper, to taste
- 200 g toasted white bread (diced)
Method
- Process the green apple, green bell pepper, fennel, celery, cucumber, and coriander in a juicer or blender one by one. Measure the juices according to the recipe.
- Combine all the measured liquids in a bowl.
- Add lemon juice, apple vinegar, and Tabasco. Season with extra virgin olive oil, salt, and pepper to taste.
- Mix in the diced toasted white bread and let the mixture rest in the fridge overnight.
- Strain the gazpacho through a fine sieve and keep it chilled in the fridge until ready to serve.
