Ingredients

  • Baking potatoes
  • Fresh herbs of your choice (parsley, rosemary, sage)
  • Butter
  • Salt

Method

  1. Slice the potatoes very thinly using a mandoline and pat them dry with a paper towel.
  2. Brush the slices with melted butter.
  3. Arrange fresh herbs between two slices and lightly press them together.
  4. Brush both sides with melted butter and place the slices on a baking tray lined with silpats.
  5. Cover with another silpat and an empty tray on top to apply pressure during baking.
  6. Bake at 190°C (380°F) for about 18 minutes, or until golden and crispy. Adjust the time based on the potato type, slice thickness, and oven used.
  7. Sprinkle with salt and serve.
