Potato Tuiles

Ingredients

  • 600 g potato purée
  • 220 g cornflour
  • 240 g olive oil
  • 170 g water
  • 24 g salt

Method

  1. Using a mixer, combine all the ingredients until smooth.
  2. Spread the mix evenly with a spatula into your choice of Silicone Mats for Tuile Decorations. Scrape off any excess mix for a thin and even layer.
  3. Bake at 165°C for 10 minutes, or until the tuiles are crisp and golden.
