Potato Tuiles
Ingredients
- 600 g potato purée
- 220 g cornflour
- 240 g olive oil
- 170 g water
- 24 g salt
Method
- Using a mixer, combine all the ingredients until smooth.
- Spread the mix evenly with a spatula into your choice of Silicone Mats for Tuile Decorations. Scrape off any excess mix for a thin and even layer.
- Bake at 165°C for 10 minutes, or until the tuiles are crisp and golden.
